A handmade work of Chinese art, with a tradition going back thousands of years. Yixing teapots are prized by collectors all over the world. These often elaborate and whimsical pots are traditionally used for gongfu steeping, where tea is served in small cups over the course of many very short infusions. Chinese Yixing Teapots are considered by some connoisseurs as the best possible way to steep tea.
The Zi Sha clay ("purple sand"), which these teapots are made of, is found only in the hilly southern area of the Yixing, in Jiangsu province. This makes it an exceptional teapot.
What makes an Yixing teapot unique is that the inside is never glazed. These teapots "season," or take on the flavor of your favorite tea to enhance every cup. Each time the teapot is used it absorbs some of the oil from the tea. Some say that after many uses, you can brew tea in an Yixing teapot without adding any tea leaves.
Which means that they should only be used for one type of tea (white, green, black, oolong, herbal), since they soak in the richness of whichever type is used.
Ideal teas for this are oolongs and pu'erhs, although some black teas will be quite lovely, as well. So no matter which tea you choose, it's recommended to dedicate a Yixing pot to a particular type of tea for best flavor.
